How Much do I Need? Fruits and Vegetables

Have you ever had a recipe that calls for 1 cup of apples and you didn’t know how many apples you needed to make that 1 cup?  Well, now you’ll know…If you recipe calls for that 1 cup of sliced or chopped apples, you will need about 1 medium sized apple.

1 cup apricots (dried halves) means you will need about 5 ounces of them.

16 to 20 stalks of Asparagus equals about 1 pound.

1 cup sliced Bananas equals 1 medium or 2 small bananas and 1 cup of mashed Bananas means you will need 2 medium ones.

If your Broccoli is chopped into 1-inch pieces, then you will have about 6 ounces.

One bunch of Broccoli equals 1 1/2 pounds of broccoli.

If your recipe calls for 4 cups of shredded Cabbage, then you will need 1 lb of cabbage.

If you need 1 medium carrot, then you need about a 7 inch carrot.  If you need 1 cup shredded carrot, then you need 1 1/2 medium carrrots.

One pound of Cauliflower flowerets equals 3 cups.

One medium ear of corn is the same as having 8 ounces of corn.  If you need 1 cup of kernels, then you need 2 medium ears to get that.

One medium clove of Garlic will make 1/2 teaspoon of finely chopped garlic.

One medium Lemon/Lime will get you 1 1/2 to 3 teaspoon of grated zest (peel) and you should get 2 to 3 Tablespoons of juice from them.

Five ounces of shredded Lettuce equals 2 cups and One medium head of Iceberg or Romaine Lettuce equals 1 1/12 pounds…

Need 6 cups of sliced Fresh Mushrooms?  You will need 1 pound of them.  If your recipe calls for 4 ounces of sliced, drained canned Mushrooms, but you only have fresh, then you will need about 2/3 cup fresh, sliced and then cook it…

1 cup of Stuffed Olives will mean you will need about 24 large Olives or 36 small ones.  For Pitted Olives, you will need about 32 medium ones.

One medium (yellow or white) onion equals 3 ounces.  Green onions with tops, you will need 2 medium ones to get 2 Tablespoons of chopped onions and 3 or 4 medium onions will yield you 1/4 cup sliced.  One medium onion equals 1/2 cup chopped.

One medium Orange will get you 1 to 2 Tablespoons of grated peel and 1/3 to 1/2 cups of juice.

Bell Peppers work like this:  1 small pepper = 1/2 cup chopped…1 medium pepper = 1 cup chopped…and 1 large pepper = 1 1/2 cup chopped.

Need a 1 1/2 pounds of Potatoes?  Then you are going to need 10 to 12 small potatoes.

One large Tomato will get you 1 cup chopped tomato and 1 small tomato will get you 1/2 cup chopped tomato.
