Cooking Eggs part 2
So you’ve learned how to poach your eggs and how to soft cook and hard cook them, so what now? How about a few pointers on how to fry and bake your eggs…
Fried Eggs:
You need to choose your grease. This can be butter, oil, bacon grease, etc. whatever you like to fry your eggs in. I personally like to fry my bacon first and then I have grease for my eggs. Adding only enough oil to make sure I have enough to cook my eggs in.
Melt your grease over medium heat. You want the grease to be about 1/8 inch deep and hot, but not splattering hot. Crack your egg into a bowl. This allows you to get any eggshells out of the egg before cooking. Carefully pour the egg into the skillet. Cut your heat down to low at this time.
If you want over-easy eggs, you want to try to flip your egg over, gently, after about 3 minutes and cook on the other side for 1 to 2 minutes longer.
If you don’t want your yolk to be runny, then you will want to cook the egg a little longer, about 7 minutes. Gently flipping the egg over and cooking another minute or two.
Tip: I usually use the back of my spatula and gently push the melted grease over the eggs. Be careful not to splash any grease out of your skillet. I have never had any luck flipping my egg over without breaking the yolk, so I ’spoon’ the grease over the egg until the whites aren’t runny anymore and their is a light film over the yolk. If you don’t want a runny yolk, just keep spooning the grease over the egg until the white and the yolk is firm.
Baked Eggs:
You are going to need some oven proof custard cups for this. Heat your oven to 325′ F. Make sure your custard cups are buttered well or you can spray with cooking spray. Break 1 egg into each custard cup. Sprinkle with salt and pepper to taste. Gently pour 1 Tablespoon of milk or half-n-half over your egg. Put a little dab of butter on the egg, be gentle so you don’t break the yolk. Bake in the oven for 15 to 18 minutes. You want the whites and the yolks to be firm and not runny.
Tip: You can sprinkle 1 Tablespoon of shredded cheese over your eggs instead of using the butter. Sprinkle with Parmesan cheese, or use your imagination and create a flavored baked egg all of your own.
